SPONGE CAKE

What makes sponge cake different from most other types of cake is its less fatty recipe. The recipe for pound cake for example can contain 25% fat, but the sponge cake is made with very little fat or no fat at all, other than what is in the egg yolks. The result is a cake with much lighter eating properties, which makes it a perfect base for adding creamy fillings. Then the cake batter is continuously aerated to the required density.
